"This traditional green gumbo is often prepared during Lent. To make it totally vegetarian, simply eliminate the sausage and substitute vegetable broth for the chicken broth. For a shortcut version, substitute 3 to 4 (10-ounce) packages of frozen greens, thawed and drained, and reduce cooking time to 20 minutes, or until greens are tender...."

INGREDIENTS
1/4 cup vegetable oil
1/3 cup flour
1 1/2 cups diced onion
3/4 cup diced celery
3/4 cup diced green bell pepper
1 tablespoon minced garlic
1 to 2 tablespoons Cajun seasoning, or to taste
6 cups chicken broth
2 1/2 pounds washed and trimmed greens, such as collards, mustard greens, kale, chard or spinach, chopped
2/3 pound Kielbasa or andouille sausage, sliced
1 to 2 tablespoons cider vinegar
1/2 cup minced scallion
