INGREDIENTS
12 ounces unsauced smoked pulled pork (we used Kirkland Signature brand from Costco)
1 tablespoon vegetable oil
1 medium yellow onion, chopped
1 4-ounce can diced mild green chiles
1 teaspoon ground cumin
1 teaspoon dried oregano
12 corn tortillas
1 14-ounce can green chile enchilada sauce (mild or medium, depending on your taste)
1 cup shredded cheddar cheese.
