1 tablespoon coconut nectar [can sub another sweetener, if desired]
1½ cups sorghum flour
¾ cup tapioca starch/flour
½ cup amaranth flour
½ teaspoon xanthan gum
⅛ teaspoon sea salt
1 tablespoon applesauce
4 ounces hemp tofu, cubed [can sub regular tofu if not allergic to soy]
¼ cup apple cider vinegar
¼ cup freshly squeezed lemon juice
1 tablespoon dried oregano
1 tablespoon dried thyme
1 small red onion, thinly sliced into rings
2 cups sliced cherry tomatoes
1 cup chopped spinach
½ cup pitted and chopped Kalamata olives
2 tablespoons nutritional yeast
1 tablespoon dried oregano
2 teaspoons red pepper flakes
2 tablespoons molasses
1 tablespoon water
1 tablespoon nutritional yeast
