Greek Style Eggplant Pasta (aka Moussaka Pasta)

INGREDIENTS
8 ounces pasta (gluten-free for gluten-free)
1 tablespoon olive oil
1 medium eggplant, cut into 1 inch pieces
1 pound ground lean lamb (or beef)
1 onion, diced
4 cloves garlic, chopped
1 teaspoon dried thyme
2 teaspoons dried oregano
1/2 teaspoon cinnamon
1/4 teaspoon allspice (optional)
1 (14.5 ounce) can diced tomatoes
1 (14.5 ounce) can pureed tomatoes (or marinara sauce)
salt and pepper to taste
1 tablespoon parsley (and/or mint, basil), chopped
