INGREDIENTS
1/2 cup plain full fat Greek yogurt
1/4 cup olive oil
1 tsp lemon zest
3 Tbsp lemon juice (fresh tastes best)
1 Tbsp red wine vinegar
7 cloves garlic (grated or finely minced)
1 tsp Dijon mustard
2 tsp dried oregano
1 tsp dried parsley
1 tsp dried thyme
1 tsp kosher salt
1/2 tsp black pepper
pinch red pepper flakes or crushed red pepper
1 1/2 lbs boneless skinless chicken thighs (trimmed of excess fat and sliced into 1 or 1 1/2 inch cubes)
1 red onion (sliced into 1 or 1 1/2 inch squares)
1 bell pepper (any color) (seeded and sliced into 1 or 1 1/2 inch squares)
1 medium zucchini (sliced into 1 or 1 1/2 inch circles)
chopped fresh parsley
crumbled feta cheese
lemon wedges
