2 cups vegetable stock
1/2 cup extra virgin olive oil
1 large red bell pepper, 1/4 inch dice
1 large yellow bell pepper, 1/4 inch dice
2 cups arborio rice
1/4 cup chopped flat leaf parsley, divided
2 tablespoons dry white wine
1/2 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper
1 cup mussels, cooked and then shelled
1 pound extra large raw shrimp, shelled, deveined, and cut into thirds
1 cup frozen peas
