INGREDIENTS
1 1/2 cups uncooked orzo pasta
1 (12-14 oz) can artichoke hearts, drained well and chopped
1 large tomato (drained, seeded and chopped)
1 English cucumber (seeded and chopped)
1 purple/red onion (chopped)
1 cup crumbled feta cheese
1 (2 ounce) can sliced black olives, drained
1/4 cup chopped fresh parsley
1/3 cup olive oil
2-3 tablespoons lemon juice (to your taste)
1-2 teaspoons Greek Seasoning
