INGREDIENTS
3-4 pound/1.4 to 1/8 kg leg of lambboned and tied
juice of 1 1/2 lemons
zest of 1 lemon
1/4 cup/60 mL olive oil
3 cloves garlic, minced
1/4 cup/60 mL fresh oregano
1 teaspoon/5 mL fresh thyme
1 teaspoon/5 mL onion powder
1 teaspoon/5 mL fresh ground black pepper
For herb dressing:
1/4 cup/60 mL fresh oregano, lightly chopped
juice of 1/2 a lemon
1 teaspoon/5 mL fresh thyme
1 tablespoon/15 mL olive oil
1 teaspoon/5 mL sea salt
dash of black pepper
1 small onionchopped into thin rings
