3 shallots or 1 Large red onion, finely diced
•
5 garlic cloves, peeled and chopped

½ teaspoon chili flakes

2 tablespoons Tomato paste

1 teaspoon paprika
•
¼ cup white or red wine (optional)
•
1 (28 oz) can finely diced tomatoes or 4 large fresh tomatoes, minced
•
1 cup of water or broth, divided (plus more as needed)
•
1 lb baby potatoes halved (or 3-4 potatoes, cut into 1½” pieces)
•
1½ pounds green beans, ends trimmed (left whole or halved)
•
¼ cup chopped flat leaf parsley, plus more for serving
•
1-2 tablespoons minced fresh dill
•
1-2 tablespoons minced fresh mint, chopped
