INGREDIENTS

4 Boneless, Skinless Chicken Breasts, cubed in 2" pieces

Zest and Juice Of 2 Lemons, about 1/4 Cup but only use fresh!

1/3 Cup Olive Oil
•
3 Cloves of garlic, minced
•
1 Teaspoon White or Red Wine Vinegar
•
1 Teaspoon Sugar
•
2 Tablespoons Fresh Oregano, roughly chopped
•
1 Tablespoon Fresh Parsley, minced
•
2 Teaspoons Sea salt or Kosher Salt
•
Freshly ground pepper
•
1 Red Bell Pepper, chopped in 1-2" pieces
•
1 Green Bell Pepper, chopped in 1-2" pieces
•
1/2 Red Onion, cubed

1 Lemon, halved and rubbed with olive oil on the flesh side.

1 English cucumber, peeled slightly (peel, skip a section, peel, skip etc)
