INGREDIENTS

2 roma tomatoes, chopped into chunks

1 red onion, chopped into chunks

1 zucchini, sliced into rounds

1 red or yellow bell pepper, chopped into chunks

2 large boneless, skinless chicken breasts, cut into 1 inch chunks

1/3 cup olive oil
•
3 cloves garlic, minced
•
1/3 cup plain Greek yogurt
•
1/3 cup lemon juice
•
3 tsp red wine vinegar
•
1/3 cup diced red onion
•
3/4 tsp coriander
•
1 1/2 tsp dried oregano
•
1 1/2 tsp dried thyme
•
Salt and freshly ground black pepper, to taste

1/2 of an english cucumber, peeled and chopped
•
2 cups plain Greek yogurt
•
3 cloves garlic, minced
•
2 tsp dried dill
•
2 Tbsp fresh lemon juice (juice from about half a lemon)

1 Tbsp chopped fresh parsley
