INGREDIENTS
2 lbs. Chicken Breast
1/3 cup Olive Oil
1/4 cup Fresh Lemon Juice
1 Tablespoon Red Wine Vinegar
1/4 cup Greek Yogurt ((optional))
2 teaspoons Oregano
1 1/2 teaspoons Salt
1 teaspoon Pepper
1-2 Cucumbers ((peeled and sliced))
2 cups Grape Tomatoes
1/2 Red Onion ((sliced))
3/4 cup Kalamata Olives
1 cup Feta Cheese ((crumbled))
Tzatziki Sauce ((recipe below))
1 1/2 cups Greek Yogurt
2 Tablespoons Olive Oil
1 Tablespoon Lemon Juice
1 Tablespoon Red Wine Vinegar
1 teaspoon Salt
3 Garlic Cloves ((minced or 1/2 teaspoon garlic powder))
1 Tablespoon Fresh Dill ((chopped))
1 Cucumber ((peeled and grated, squeeze excess liquid with cheesecloth or paper towel))
