Grandma's Corn Chowder with Bacon

INGREDIENTS
8 slices thick-cut bacon
1 medium onion, diced
2 celery stalks, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
2 medium russet potatoes, peeled and cut into 1/2-inch cubes
4 cups fresh corn kernels (from about 5 ears of corn)
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup heavy cream, room temperature
Shredded cheddar cheese and chopped chives, for garnish
