Grandma Helen's Oatmeal Cookies
"I had asked my grandmother for some cookie recipes awhile back and she very kindly included her oatmeal cookie recipe which I have always loved. I really dislike oatmeal cookies with cinnamon and nutmeg, etc. in them so I was thrilled to get this recipe. It can be tailored to your tastes as far if you prefer nuts or chocolate chips or raisins or whatever!..."
INGREDIENTS

1 c butter

1 c white sugar
•
1 c brown sugar, firmly packed

2 large eggs, well-beaten
•
1 tsp vanilla
•
1 tsp salt
•
1 tsp baking soda
•
1 1/2 c white flour
•
3 c quick oatmeal
•
2 c coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)
