Graham Cracker Lime Shortbread Cookies
"So, I love the flavor of Lime. That’s no secret. I think my love affair with the green citrus started when I made Key Lime Pie when I was young- maybe 8 or 9. Pretty sure the crust was pre-made, and the filling was some shortcut that consisted of a Jello mix, but it was such a beautiful light green, and sweet, and tart and crunchy… man I was proud of that thing! I think about that pie a lot, and how I can capture those flavors in a different format. I’ve posted about my Coconut Lime Ba…..."
INGREDIENTS

5 Graham Crackers

Zest of one Lime
•
1/2 Cup Sugar
•
1 Tbsp Lime Juice
•
1/2 cup Unsalted Butter (Softened to room temperature)
•
1 cup All-Purpose Flour
•
1/2 tsp Salt
•
1 cup White Chocolate Chips (melted)
•
Sprinkles (optional)
