2 (15-16 oz.) cans plain pureed pumpkin (not pie mix)
• 6 Tbsp. Butter, divided
• 1 large onion, finely chopped
• 3 cups water
• 1 (12 oz.) can evaporated milk
• 4 Tbsp. flour
• freshly grated nutmeg, to taste (about 1/2 tsp. to start)
• salt
• pepper
• 1 egg yolk (optional)
• homemade croutons
