INGREDIENTS
9 large eggs
1 1/4 tsp. ground turmeric
2 Tbs. olive oil
1/2 medium yellow onion, sliced into ¼-inch half-moons
1 large red bell pepper, sliced (2 cups)
1 1/4  cups cooked chickpeas, or one 15-oz. can chickpeas, rinsed and drained
1 packed cup baby spinach, roughly torn
