"If you don't know what Goetta is, it's a Cincinnati/Northern Kentucky thing. It's essentially sausage with grains in it, but you can substitute regular breakfast sausage. Go with a crumbly one, like a log of jimmy dean (vs. links or patties). I cooked mine in a round spring form pan (like used for cheesecakes). It made it easier to cut and serve.
