1/4 cup dry instant lemon pudding mix (OR an additional tablespoon of each sweet rice flour and potato starch)
3/4 teaspoon xanthan gum
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup milk
1/4 cup lemon juice
2 teaspoons lemon zest (zest of one large lemon)
1 cup unsalted butter, at room temperature
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup confectioners’ (icing) sugar
1-2 Tablespoons lemon juice
