1 teaspoon xanthan gum (omit if your blend already contains it)

1/4 teaspoon baking soda

1/4 teaspoon baking powder

1/8 teaspoon kosher salt

1 teaspoon ground cinnamon (optional)
•
1/4 cup granulated sugar
•
1/3 cup packed light brown sugar
•
6 tablespoons nonhydrogenated vegetable shortening ((I use Spectrum brand), melted and cooled)
•
2 tablespoons honey
•
2 tablespoons unsulphured molasses
•
1/2 teaspoon pure vanilla extract
•
1 egg (at room temperature, beaten)
•
2 to 4 tablespoons milk (at room temperature)
•
1/2 cup granulated sugar
•
1 1/2 teaspoons ground cinnamon
