INGREDIENTS

5 cups dried fruit of choice (I like to use a mix of currants, raisins, dates, cranberries, apricots and candied ginger)

1 cup sparkling water (plain or flavor of choice)

2 cups almond flour (or almond meal)
•
2 cups gluten-free all-purpose flour
•
¾ cup coconut sugar (or granulated sugar of choice)
•
¼ cup ground flaxseed
•
2 teaspoons mixed spice
•
1 teaspoon baking powder
•
½ teaspoon ground cinnamon
•
½ teaspoon ground nutmeg
•
¼ teaspoon salt
•
½ cup refined coconut oil (melted)
•
½ cup butter (melted, use vegan butter or more coconut oil if needed)
•
½ cup orange juice (plus 1/3 cup for drizzle (last step))
•
1 teaspoon almond extract
•
1 teaspoon vanilla extract
