1/2 cup vegetable oil
4 large eggs
4 1/2 cups (1 pound) shredded carrots
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 box King Arthur Flour Gluten-Free Yellow Cake Mix
1/2 teaspoon baking soda
1 cup raisins
1 1/2 cups finely chopped pecans or walnuts
20-ounce can crushed pineapple, drained, optional*
*Or substitute pineapple rings or chunks, drained and chopped
1/2 cup (8 tablespoons) unsalted butter
8-ounce package cream cheese
1/4 teaspoon salt
2 teaspoons vanilla OR 1/2 teaspoon Fiori di Sicilia
2 1/2 to 3 1/2 cups glazing sugar or confectioners' sugar
milk or cream to adjust frosting's consistency, if necessary
