INGREDIENTS
1 cup fine sorghum flour OR fine brown rice flour
1/4 cup ground golden flaxseed ((also called golden flaxmeal))
1 ½ teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon nutmeg
3/4 cup rice milk or oat milk
1/2 cup fine shredded carrots ((about 1 medium/large carrot))
1/2 cup + 3 Tablespoons packed brown sugar
1/4 cup light tasting olive oil ((or other mild tasting oil))
2 teaspoons vanilla extract
1/4 cup + 1 Tablespoon dairy free and soy free cream cheese ((I used Daiya))
1/4 cup powdered sugar
1 teaspoon vanilla extract
2-3 Tablespoons rice milk or oat milk
