Ingredients
- 1 Medium size ripe honeydew melon (about 3 1/2 to 4 pounds)
- 1 1/2C Water
- 1/2C Sugar
- 6 (1 inch) Squares crystallized ginger
- 1/2 Lemon (quartered)
How To Make gingered honeydew melon

Step 1Halve melon lengthwise and scoop out seeds; remove rind and cut melon into bite sized cubes; place in a large mixing bowl. Simmer water, uncovered, with sugar and ginger about 30 minutes, stirring occasionally. Off heat, add lemon and cool to lukewarm.Pour syrup and lemon over melon, toss to mix, cover and chill 3 to 4 hours.Remove lemons, spoon melon into stemmed goblets and top with a little of the syrup.
