INGREDIENTS
FOR THE MUFFINS:
6 Tablespoons Butter, Melted And Cooled
⅔ cups Coconut Palm Sugar (or 1/2 Cup Lightly Packed Light Brown Sugar)
¼ cups Molasses
½ cups Dry-style (aka California-style) Cottage Cheese
½ cups Milk
1 whole Large Egg
1 teaspoon Pure Vanilla Extract
1-½ cup Whole Wheat Pastry Flour Or All-Purpose Flour
½ teaspoons Baking Soda
¼ teaspoons Salt
1 teaspoon Ground Ginger
1 teaspoon Ground Cinnamon
¼ teaspoons Ground Allspice
¼ teaspoons Ground Cloves
1 pinch Ground Black Pepper (see Note Below)
FOR THE GLAZE:
½ cups Powdered Sugar
½ teaspoons Vanilla Bean Extract Or Pure Vanilla Extract
3 teaspoons Water
