1 large egg, lightly beaten
½ cup vegetable oil
½ cup sugar
½ cup molasses or sorghum
½ cup boiling water
Optional, for serving: lemon sauce (recipe follows), powdered sugar, or whipped cream
¾ cup sugar
2 tablespoons cornstarch
1 ¼ cups boiling water
Zest and juice from 1 lemon
2 tablespoons salted butter
¼ teaspoon vanilla extract
