•6 medium to large fresh beets, trimmed of green tops and taproots

•3/4 cup unseasoned rice wine vinegar (or white wine or apple cider vinegar, not white vinegar)

•1/3 cup sugar (or equivalent amount of Splenda or erythritol)
•
•1/3 cup water
•
•1/2 cup orange juice, or use 2 rounded T. frozen concentrate
•
•two cloves garlic, chopped
•
•1/2 large Walla Walla sweet onion, sliced into rings
•
•large 3" knob of fresh ginger root, peeled
