German Potato Salad

INGREDIENTS
2 1/2lbs. yellow potatoes, chopped into bite-sized pieces
16 slices cooked thick cut bacon, reserve grease
1 small white onion, diced
1 tablespoon flour
1/3 cup white vinegar
1/2 cup water
1/2 tsp. ground mustard
1 Tbsp. granulated sugar
1/4 cup chopped celery
salt and pepper to taste
2 Tbsp. dried parsley
