By replacing garbanzo beans with boiled peanuts, I like to call this redneck hummus!

One 15-ounce can or 2 cups fresh boiled peanuts, shelled
•
5 tablespoons tahini
•
3 tablespoons fresh lemon juice (about 1 lemon)
•
2 tablespoons chopped fresh parsley
•
2 teaspoons minced garlic
•
2 teaspoons lemon zest
•
1/4 teaspoon cayenne pepper
•
2 tablespoons olive oil
•
Salt and pepper
•
Serving suggestions: chips, crackers or vegetables
