INGREDIENTS
Gazpacho is a refreshing cold soup that’s made from a pureed mixture of tomatoes, bell peppers, onions, cucumbers, and bread crumbs. This variation is topped with crab.

Prep Time: 20 min.
Yield: 4 servings, about 1½ cups each
Ingredients:
• 3 slices sourdough bread, toasted, diced
• ¼ cup water
• 1½ pounds ripe tomatoes, quartered
• 1 medium green bell pepper, chopped
• ½ small red onion, chopped
• 2 large cucumbers, peeled, seeded, chopped
• 2 cloves garlic, chopped
• 2 Tbsp. red wine vinegar
• 3 Tbsp. extra-virgin olive oil
• ¼ tsp. sea salt
Optional: Chopped fresh red onion and fresh parsley sprigs for garnish
