freshly grated zest of 1 lemon
1/8 tsp salt
1 extra-large egg
1 extra-large egg yolk
1 1/2 cups all-purpose flour
1 tsp baking powder
Filling:
1/4 cup plus 2 TBSP sugar
1/4 cup all purpose flour
4 extra-large egg yolks
1 3/4 cups whole milk
? vanilla bean, split lengthwise and scraped
1 TBSP light rum
1/2 tsp almond extract
3/4 cup black cherry preserves
1 egg, beaten, for egg wash
