Generous 1 teaspoon salt
1 tablespoon sugar
1/4 cup cold shortening
1/2 cup (1 stick) cold butter, cut into 1/2-inch cubes
2 1/4 teaspoons cider vinegar
4 to 6 tablespoons ice water, more if needed
