INGREDIENTS
Cookie Cups
•3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
•3/4 cup light brown sugar (or dark brown)
•1/4 cup sugar
•1 large egg, at room temperature preferred
•2 teaspoon vanilla extract
•2 cups all-purpose flour
•2 teaspoon cornstarch
•1 teaspoon baking soda
•1/2 teaspoon salt
•1 and 1/4 cup semi-sweet chocolate chips
Funfetti Cheesecake Layer
•16 ounces cream cheese (two 8 oz packages), softened to room temperature
•1/2 cup sugar
•1 large egg
•3/4 teaspoon vanilla extract
•1/2 heaping cup sprinkles (not the little ball sprinkles, aka nonpareils; those will bleed their color)
