Peanut oil, for frying

2 tablespoons butter
•
2 tablespoons flour
•
1 cup milk
•
½ cup shredded colby jack cheese
•
2 tablespoons mayonnaise
•
1 tablespoon sweet pickle relish
•
1 tablespoon fresh lemon juice

2 hamburger buns or sandwich rolls, split

2 leaves Boston bibb lettuce

4 slices tomato
