INGREDIENTS
2 pints grape tomatoes (halved or 3 cups diced tomatoes)
¼ cup red onion (thinly sliced )
1 tablespoon fresh herbs (I used basil & a pinch of fresh oregano)
3 tablespoons olive oil
1 tablespoon red wine vinegar
salt & pepper to taste
½ cup bocconcini (sliced or diced, optional)
