For the Lemon Curd:
3 eggs
5 egg yolks
1/2 cup granulated sugar
3 tbsp. milk
Pinch of salt
1/2 cup fresh lemon juice
8 tbsp. (1 stick/4 oz/113 gm) softened unsalted butter, cut into 1-inch pieces
For the Meringue:
4 egg whites
1/2 tsp. vanilla extract
1/4 tsp. cream of tartar
1/3 cup granulated sugar
