INGREDIENTS
8 tbsp. unsalted butter
6 oz, (3/4 cup) Gruyere or Comte, finely grated
3 minced garlic cloves
2 c. fresh corn kernels cut off the cob (about 4 ears)
1/2 c. diced red bell pepper
2 tsp. jalapeno, seeded and finely chopped
Salt and freshly ground black pepper
5 tbsp. unbleached all-purpose flour
3/4 c. whole milk
3/4 c. half-and-half
6 large eggs, whites and yolks separated
1/4 tsp. cream of tartar
