1/4 teaspoon EACH ground ginger & allspice
1 cup (240ml) vegetable oil
1 cup (200g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
1 cup (180g) unsweetened applesauce
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 Tablespoons (30ml) orange juice
3 cups (360g) peeled chopped apples (1/2-inch chunks, about 2–3 large apples)
1/4 cup (1/2 stick or 57g) unsalted butter
1 cup (200g) packed light or dark brown sugar
1/2 cup (120ml) heavy cream
small pinch of salt
1/2 cup (60g) confectioner’s sugar, sifted
