INGREDIENTS

4 lbs small red potatoes, unpeeled, scrubbed, and cut into 1/4 inch thick slices

4 Tbsp salt
•
4 medium garlic cloves, peeled
•
3 Tbsp Champagne vinegar or white wine vinegar
•
4 tsp whole grain mustard (My favorite is from Trader Joe's)
•
1/2 cup olive oil
•
4 Tbsp fresh lemon juice
•
1 tsp ground black pepper
•
2 small shallot, minced (about 4 Tbsp)
•
2 Tbsp minced fresh chives
•
2 tbsp minced fresh tarragon leaves
•
2Tbsp minced fresh thyme
