French Onion Squash Casserole

INGREDIENTS
FOR THE SQUASH:
3 1/2 - 4 pounds fresh squash, cut into chunks
1 large yellow onion, chopped
1/4 cup extra virgin olive oil
sea salt & freshly ground pepper to taste
4 TB butter, melted
FOR THE CHEESE SAUCE:
1 can cheddar cheese soup
1 (8-oz) carton French onion dip (I use Dean's)
2 cups shredded sharp cheddar
1 tsp dry mustard
1/2 tsp cayenne pepper
FOR THE TOPPING:
2 sleeves Ritz crackers, crushed
4 TB butter, melted
2 TB poppyseed (optional)
