1/4 cup salted butter
2 tbsp olive oil
2 tbsp fresh thyme
2 cups beef broth
3 medium russet potatoes
3 cups vegetable oil (or enough to fill half a stock pot. )
1 cup shredded Swiss cheese
3 slices provolone cheese
