French Onion Chicken

INGREDIENTS
4 boneless skinless chicken breasts
Salt/Pepper
2 Tablespoons Italian seasoning
8 slices mozzarella cheese (or 2.5 cups shredded)
4 Tablespoons butter
1 Tablespoon olive oil
2 extra large yellow onions (sliced 1/4 inch thick. See Notes.)
1 Tablespoon flour
2 cloves garlic minced
1/3 cup dry white wine (such as Pinot Gritio )
1 ¼ cup chicken broth
1 sprig fresh Thyme
