INGREDIENTS
For a single crust:
1 1/2 cups all-purpose flour
6 tablespoons unsalted butter (3/4 stick), cut into small pieces and chilled
4 1/2 teaspoons vegetable shortening, chilled
1 teaspoon granulated sugar
1/2 teaspoon fine salt
3 to 4 tablespoons ice water
For a double crust:
2 1/2 cups all-purpose flour
11 tablespoons unsalted butter, cut into small pieces and chilled
2 tablespoons plus 1 1/2 teaspoons vegetable shortening, chilled
2 teaspoons granulated sugar
3/4 teaspoon fine salt
5 to 6 tablespoons ice water
