3 cups King Arthur Unbleached All-Purpose Flour

1 1/4 teaspoons salt

1 teaspoon baking powder
•
2 teaspoons instant yeast

1 1/4 cups (20 tablespoons) cold unsalted butter*
•
1 1/2 cups ricotta cheese, full-fat or part-skim
•
*If you use salted butter, reduce the salt in the recipe to 3/4 teaspoon.
