INGREDIENTS
2 oz dried ancho chiles
3 1/2 c water
1 28oz can whole peeled tomatoes
3/4 c crushed corn tortilla chips
1/4 c canned chipotle chile in adobo sauce
2 tbsp vegetable oil
2 lbs 85 percent lean ground beef
Salt and pepper
2 pounds onions, chopped fine
2 jalapeño chiles, stemmed, seeds reserved, and minced
6 garlic cloves, minced
2 tbsp ground cumin
2 tbsp chili powder
1 tbsp dried oregano
2 tsp ground coriander
2 tsp sugar
1 tsp cayenne pepper
1 1/2 c beer (light bodied lager like Budweiser works best)
3 15oz cans pinto beans, rinsed
