2 oz dried ancho chiles

3 1/2 c water

1 28oz can whole peeled tomatoes

3/4 c crushed corn tortilla chips
•
1/4 c canned chipotle chile in adobo sauce
•
2 tbsp vegetable oil
•
2 lbs 85 percent lean ground beef
•
Salt and pepper
•
2 pounds onions, chopped fine
•
2 jalapeño chiles, stemmed, seeds reserved, and minced
•
6 garlic cloves, minced
•
2 tbsp ground cumin
•
2 tbsp chili powder
•
1 tbsp dried oregano

2 tsp ground coriander
