16 ounces coleslaw mix
½ cup cilantro, chopped
3 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon salt
1 recipe cilantro lime cauliflower rice
½ cup diced tomatoes
1/2 red onion, sliced into thin strips
