Fish Pie

"Here's my take on a classic Fish Pie with a combination of fish, lots of veggies in a creamy white sauce and topped with mashed potatoes...."

INGREDIENTS
2 lb potatoes (such as Yukon, peeled and cut into cubes)
3 tbsp butter (unsalted)
⅔ cup milk
½ tsp salt
3 tbsp butter (unsalted)
3 green onions (cut into ½ pieces on the diagonal)
2 medium carrots (chopped)
2 cloves garlic (minced)
3 tbsp all-purpose flour
2 cup milk
2 cups white cheddar (shredded, divided)
1 tsp Dijon mustard
2 tbsp fresh dill (chopped)
2 lbs fish (mixed such as cod, halibut, salmon, cut into 2 inch pieces.)
1 cup frozen peas
½ tsp black pepper
½ tsp salt
