INGREDIENTS
4 large ramps or scallions, cut into 2-inch lengths
1/2 cup mayonnaise
2 tablespoons soy sauce
1 tablespoon fresh lemon juice
1 1/2 teaspoons apricot jam
1 teaspoon grated fresh ginger
1 small garlic clove
1 teaspoon dry English mustard mixed with 1 tablespoon of water
1/2 cup extra-virgin olive oil
Kosher salt
1 quart vegetable oil, for frying
4 skinless sea bass (about 1 3/4 pounds), cut crosswise into 1-inch-wide strips
2 cups buttermilk
1 cup all-purpose flour
1/2 teaspoon Old Bay seasoning
1/2 teaspoon ground coriander
Lemon wedges, for serving
