2 cups carrots, peeled and cut into 1/2 inch dice

1 1/2 cups onion, diced

1 tablespoon fresh garlic, minced

1 pound 80/20 ground beef
•
1/2 pound ground pork
•
1 tablespoon tomato paste
•
1/2 pound fresh plum or San Marzano tomatoes, seeded, corded and diced (alternatively, you could use a 15-ounce can of diced tomatoes with liquid)

1/2 teaspoon kosher salt
•
1/4 teaspoon freshly ground black pepper
•
1/2 cup raisins
•
1 tablespoon fish sauce
•
3 tablespoons good quality soy sauce
•
1 teaspoon chili garlic paste
•
1 cup water
•
1 cup frozen peas, thawed
