Ingredients: 1 Tbsp olive oil; 1 Tbsp butter; 4 beef tenderloin steaks; Sea salt and cracked black pepper; 1/4 cup white wine vinegar; 1/4 cup dry white wine; 1/4 cup shallot, finely chopped; 1 Tbsp fresh tarragon; 3 eggs yolks; 1 stick butter, cut into 8 pieces; 1/2 tsp lemon juice; To assemble:; 8 oz lump crab, picked over for shells (or the meat from 2 large steamed King Crab legs); Tips from 1 lb asparagus, blanched
